  1. Arrange 8 butter cookies on a plate, chocolate side up.
  2. Spread each cookie with a heaping teaspoon of peanut butter.
  3. Toast marshmallows over a grill or camp re until golden brown, 2 to 3 minutes.
  4. Immediately place a marshmallow on each peanut butter spread cookie.
  5. Sandwich with remaining 8 cookies.

Tip

Marshmallows can be broiled in oven on a foil-lined baking sheet for 1 to 2 minutes.
